I made a quick video showing off my set-up and my new 128 Key X-Keys.

So... for the technical details and how I do this read on...
First off, I layout a key template in Visio. That looks like this:

Then I install bongos and go in game. QUICK NOTE: The default layout or interface of the actionbars translates to specific bongos numbered bars. You have to turn on all the action bars in your WoW Options Menu (the top left, top right, etc)
Your screen will have a layout like this:

The numbers on the action bar layout above (1-6) represent the numbers that bongos will assign to it's own bars. (I'll have to make a video to explain this further)
Once you get bongos loaded, you need to make ONLY 12 button bars for those numbers above to correspond. I make nine 12 button bars. Then I arrange them in my lower right corner like so:

The bottom layout corresponds to the 6 bar button layout on the bottom left section of the XKeys (the dark beige). This way when I look at the screen, I know which button is to which key.
I key-bind row 1's keys to 1 to =, 6 to Alt-1 to Alt-=, etc etc as per the button template for my xkeys.
Bongos will look like the following:

I moved the AF-BAR (the block section on the left) so you can see it.
Now, I have a visual representation of my keys on my screen. So it's easy to remember what key does what and my buttons are not HUGE and I can still see.
I set this up as standard on all my character profiles, so if I have to switch any one to main, I know what keys/buttons do what.
Finally, my XKeys looks like this:
